Cardamom & Cinnamon Brioche

Instructions

1. In mixer or large bowl, mix together the flour, sugar, cardamom, cinnamon and salt
2. Then add the and 3 eggs and continue mixing to make a smooth dough, 5 minutes in the mixture or 8 minutes by hand
3. Add the softened butter and mix for a further 5 minutes in a mixture and 10 minutes by hand
4. Put the dough in a lightly oiled bowl and leave in the fridge overnight
5. Dough should be stiff and easy to shape
6. Grease 2 x 500g bread tins
7. Then divide the dough into about 16 pieces (I do weigh the dough then divide into 16 pieces)
8. Shape them into little balls
9. Place the balls in a tin in sequences of 2 until the tin is full
10. It should take no more than 8 pieces to fill each tin
11. Leave the brioche for 3 hours to prove until double in size
12. Heat the oven to 200C eclectic and 180C fan
13. Brush the dough tops with 1 beaten egg and bake for 20 minutes until golden brown and the loaves sound hollow when tapped underneath
14. Cool on a wire rack.
