This dorset apple cake makes a very nice pudding with custard or clotted cream.

Equipment

Large mix bowl

A deep 20cm square cake tin or

22cm round cake tin

Tip

As soon as it comes out of the oven add a bit of butter and have it with a cup of tea.

Ingredients

  • 200g plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 100g unsalted butter, diced
  • 100g caster sugar
  • 2 eating apples, peeled, cored and thinly diced
  • 1 small cooking apple, peeled cored and thinly diced
  • 2 large eggs
  • 60ml milk
  • 1 tablespoon demerara sugar

Instructions

  1. Preheat the oven to 180c electric / 170c fan
  2. Grease a deep 20cm square cake tin (or a 22cm round cake tin)
  3. Line the base and sides with baking parchment
  4. Mix the flour, baking powder and cinnamon in a large bowl
  5. Add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs
  6. Stir in the sugar, followed by the sliced apples
  7. Lightly beat the eggs with the milk
  8. Add to the rubbed-in mixture and stir until well combined
  9. Transfer the mixture to the prepared cake tin
  10. Gently level the surface and sprinkle evenly with the demerara sugar
  11. Bake for 40 – 50 minutes, until the cake has a golden crust and a skewer inserted in the center comes out clean
  12. Leave the cake to cool slightly or completely in the tin before cutting into square to serve
