Ingredients
- 250g sweet potatoes, peeled and cut into small chunks
- 250g potatoes, peeled and cut into small chunks
- 100g chestnut mushroom
- 75g green peas
- 2 knobs of butter
- ½ small onion, peeled and chopped
- 100ml crème fraîche (half-fat to cut down the calories)
- 450g fish mix
- 100g prawns
- 1 tablespoon chilli flakes
- ½ teaspoon English mustard powder
- Ground black pepper
- Salt
- 75g of mixed cheese such as emmental, gruyere and cheddar is a good combination (optional)
Instructions
- Preheat the oven to 180c eletric / 170 fan
- Put the 500g of potatoes in a pan of boiling water and cook for 10 minutes
- Meanwhile, heat a little butter in a pan and gently fry the onion until soft.
- Stir in the crème fraîche and when the sauce is coming up to the boil, add the fish mix, prawns, mushroom, peas and chilli flakesand
- Season with salt, pepper and mustard
- Simmer for 5 minutes until it is cooked through
- Drain the potatoes and cover with a towel for 5 minutes
- Mash the potatoes with butter, season with salt and pepper, then set to one side.
- Put the fish mix in a 2cm pie dish
- Top the mix with the mashed potato, using a fork to rough up the top
- Sprinkle the cheese on top of the mash (optional)
- Put in the oven for 10 minutes or till the cheese melts or mash forms a crust
