Pizza Pasta Bake

I like to think Pizza Pasta Bake is as a healthy pizza, also another way to get people eating vegetables. You can also add chicken pieces if vegetarian food is not your style.


Roasted Vegetable

  • 2 bake potatoes
  • 1 sweet potato
  • 100g Squash
  • 1 Leek
  • 200g broccoli
  • 2 table spoons of Olive oil

Pizza Source

  • 750g (1lb 11oz) gnocchi
  • 3tbsp mascarpone
  • 400g tin cherry tomatoes
  • ½tbsp sun-dried tomato purée
  • 1 spring onion, thinly sliced
  • ½ garlic clove, finely chopped
  • 125g ball buffalo mozzarella, torn into pieces


20 minutes


60 – 75 minutes



  1. Preheat the oven 190ºC fan oven/200ºC electric oven
  2. Chop all the vegetables into small 2cm cubes
  3. Put them in a roasting dish
  4. Season with salt and pepper
  5. Pour olive oil and toss to coat
  6. Roast the vegetable in the hot oven for 60 minutes
  7. In the meantime prepare the pizza source
  8. In a bowl put cherry tomatoes, dried tomato puree, spring onion, garlic and mascarpone, mix well
  9. Bring a large pan of salted water to the boil.
  10. Add the gnocchi and cook for 3-4min or until they bob to the surface.
  11. Drain and tip into a large bowl
  12. When the vegetable are done take it out of the oven
  13. Mix the gnocchi with the roasted vegetable while keeping the vegetable in the roasting dish
  14. Pour the pizza mix over the gnocchi and roasted vegetable
  15. Dot over the mozzarella, then grill for 5min until piping hot and golden
