Olive Flatbread

Instructions

1. Dissolve the yeast in a little waarn water in a large bowl
2. Add the flour, salt, the rest of the wter and the oilve oil
3. If using the machine the knead on high speed for 5 minutes
4. If by hand then knead for 10 minutes
5. Until smooth and elastic
6. Cover the dough with a damp cloth and leave to rise in a warm place for about an hour or until dobled in size
7. Knead the dough again briefly and add the olives
8. Roll it out on a floured surface to form a rough leaf shape, about 15mm thick
9. Place this on a baking sheet
10. Using a sharpe knife, cut 6 or 7 slits in the dough and open them up so you can see the baking sheet.
11. Preheat the oven to 240c eletric / 220c fan.
12. Brush the dough lightly with the beaten egg.
13. Sprinkle with coarse salt
14. Bake for 9-15 minutes or until golden brown
15. Leave to cool on a wire rack.
